Corn is indigenous to Mexico and a staple of Mexican street food, so we're always looking for new ways to enjoy it, while adding to our street food menu which is now around 50% veggie! This summer it's the turn of the Corn ribs.
Slices are cut from the cob which are lightly fried, whilst cooking the corn curls slightly, resembling ribs. The 'ribs' are tossed in lime and served with a smoky chipotle mayo, making for a vibrant, seasonable dish to share as part of a summery Wahaca feast.
Those in the mood for meat will welcome the addition of the new Carnitas tacos - slow-cooked, free range confit pork shoulder, caramelised and served in toasted corn tortillas with a green tomatillo salsa. Juicy, tender and marvellously moreish - a Mexican classic for a very good reason!
