ANCHO RICH & MILD Poblano chillies are large fresh chillies. similar in appearance to green peppers but a much darker green and with a thinner skin. When dried, a poblano is transformed into the ancho chilli, a round, dark red chilli with fruity tones. Rich in flavour and fairly mild in heat (although they are steadily getting hotter), an ancho adds sweetness and depth of flavour to marinades, salsas and moles. PASILLA HERBACEOUS & RAISINY Pasilla chillies have a herbaceous, raisin-like taste with undertones of tobacco that adds huge complexity to food. In Mexico they are part of the chilli trio used to make moles (with the ancho and the guajillo) but they are also wonderful on their own thanks to their unique flavour. Try them out in my dark, squidgy chocolate brownies or shin of beef. You will be bowled over by their flavour. Our food and our name are inspired by Oaxaca, but made with the planet in mind and using ingredients sourced from much closer to home – and, therefore, with a spelling to match!   Oaxaca as a city keeps evolving and changing, just as its name has over the years. In the indigenous Mexican language Nahuati the area we now know as Oaxaca was called Huaxyacac. Later under Spanish settlement it changed to Guaxaca and then over time it evolved to Oaxaca. When Mark and Tommi were exploring a name for their first restaurant somewhere in the UK, honouring and inspired by Oaxaca and made with the best local and freshest ingredients they could find, they went to the Embassy of Mexico in London to make sure they had their blessing to use a reimagined spelling of Oaxaca that would trip easily off the British tongue. Cook for at least 5 minutes or until the onion has turned translucent without colouring, before adding the garlic and allspice, salt and pepper. Turn up the heat and cook for another 5-10 minutes until the corn starts gently taking on some colour and caramelising. Here’s what she had to say about her recipe inspiration: “In Mexico, cooks will use any seasonal vegetable to fill in their numerous street-food parcels and I remember having a glorious sweet pea gordita at a market outside Mexico City. At Wahaca we often have a summer pea and mint empanada on the menu which we serve with a deliciously spiced, vibrant yellow habanero salsa. They sell like wildfire. The feta, similar to a Mexican queso fresco, seasons the puree with a salty tang. " Ingredients450g peas, fresh or frozen. Three tablespoons of extra virgin olive oil plus a little for drizzling. 50g feta. Method1. Simmer the peas in boiling water for two or three minutes until tender. 2. Blitz with three tablespoons of the olive oil to get a rough mash. Season generously with salt and pepper. 3. Arrange in a bowl, crumble over the feta and drizzle over a little more olive oil. 4. Serve with pitta crisps, on corn tostadas. You can even stir it into pasta with a salted ricotta instead of the feta and plenty of lemon zest and juice. Ingredients 2 tablespoons olive or vegetable oil2 small shallots, finely chopped1 fat clove of garlic, chopped2 corn kernels cut from a cob1 green chilli, finely chopped3-4 medium courgettes, cut into small dice1 tablespoon chopped mint1 tablespoon chopped chervil, tarragon or parsleyjuice of a limeFeta, crumbled to serveTortillas, to serve Cooking time: 20 minutes Method Heat a heavy-bottomed frying pan and add the oil. When hot, add the shallot, corn, chilli and courgette. Fry, stirring all the time, until the vegetables are gently coloured on all sides and the onion is translucent. Now add the garlic and spices and sauté for another minute or two. Squeeze over the juice of half a lime, add half a cup of water and cover, allowing the courgette to seam in their own juices for another 3-4 minutes. Stir in the chopped herbs (keeping a few back for garnish), squeeze over the remaining lime juice, and season to taste. They're more caramelised, more garlicky and more delicious than anything you can imagine.   Eat a bowl of them in front of a box set, or as a side to a spread of Mexican goodies.   No matter how many you make, they will always disappear... . To get started, you’ll need: Coloured tissue paper Scissors String Sticky Tape --- ### Mexican Flour Tortillas - Published: 2020-05-11 - Modified: 2023-08-17 - URL: https://www.wahaca.co.uk/proper-mexican-flour-tortillas/ - Categories: News, Uncategorized Although we love a corn tortilla, there are times when a flour tortilla (found more usually in the north of Mexico) really hits the spot, particularly when making quesadillas, burritos or you need something to mop up a queso fundido. A real Mexican flour tortilla is enriched with lard which creates an extra special finish to the tortilla, making them super stretchy, silky tasting and entirely delicious. The trick is to roll them out as thin as possible so that when they hit the pan and start toasting, they look almost like crepes, imperceptibly transparent and so good that the filling is almost just an add-on. Happy eating! Ingredients Makes approx. 12 300g plain flour (you can use strong if you have it)4g baking powder50g lard or butter, diced210g yoghurt5g salt Method Sift together the flour and baking powder and then rub in the fat with your fingers until incorporated. Turn into a mixer, or onto a board, add the yoghurt and salt and knead for 5 minutes by hand or with a dough hook on a low to medium speed until the dough comes together into a smooth ball. It will be very slightly sticky. Rest for at least 30 minutes, preferably 1-2 hours, then lightly dust your work surface and divide out the dough into even-sized ping-pong sized balls, about 50g each. Push down into flat pancakes with your fingers, then roll out with a floured rolling pin as thin as you can. So here’s our recipe for the ultimate Guacamole, a twist on the recipe we’ve been making every morning at our restaurants since day one. Guacamole in Aztec means avocado (from ‘guac’) sauce (from mole). The secret to a good guacamole is to use ripe avocados, masses of fresh coriander and really mash up the chilli to a paste before you even begin to think about adding the avocados. Ingredients 3 ripe Hass avocados½ red onion, very finely chopped1-2 serrano chillies or other fresh green chillies, finely choppedA small handful of fresh coriander, choppedThe juice of 1-2 limes1-2 teaspoons Maldon saltPlenty of freshly ground black pepper Optional Extras 1 small clove garlic1 very ripe tomato, de-seeded and diced Method: Put a quarter of the onion and half the chilli and salt in a pestle and mortar and mash to a rough paste. Cut open the avocados, remove the stones and scoop out the flesh into the pestle (or into a large bowl if your pestle is small). Roughly mash the flesh with a fork, adding the half the lime juice as you go. When you have a rough guacamole, stir in the rest of the lime juice and chillies, coriander and red onion. Season with plenty of black pepper and more salt if you think it needs it. If it doesn’t taste delicious by this stage, think whether it might need more lime juice or coriander. The combination of sweet ancho chilli, subtle Mexican spicing and crispy grilled chicken is a delight.   At home you can segment a whole chicken to have bones leftover to make a stock, or you can use chicken thighs. If you can’t get hold of whole ancho chillies, we’ve included a simpler dry rub using pimenton, a wonderful Spanish smoked paprika. Ingredients 1 chicken, segmented, or 8 chicken thighs Ancho marinade (see below) Corn or flour tortillas (2-4 per person, depending on size) 1 bunch spring onions A small bunch coriander 2-3 limes, cut into wedges Guacamole or a roast salsa, or ideally both For the marinade 2 ancho chillies 1 tbsp black peppercorns 1 small cinnamon stick 1 tbsp cumin seeds 10-12 cloves 2 tsp sweet smoked paprika 2 large tbsp soft brown sugar 2 tsp salt 1 tsp dried oregano 2 large cloves garlic, or 3-4 smaller ones, crushed 4-5 tbsp vegetable or olive oil Method First, make the marinade.  Open up the ancho chillies like a book and discard the stem and seeds.   Toast for 30-40 seconds a side in a hot dry frying pan until smelling fragrant, then cover with boiling water and leave to rehydrate for 10-15 minutes.   Meanwhile, get out all the spices. As well as a warming kick, its smokiness adds a layer of depth to your cooking and it’ll leave you wondering what you were doing in life without it. It lasts for months and it’s delicious in stews, pasta sauces, meatball recipes, dressings and mayonnaises. Cooking time: 1 hour total Ingredients200g chipotle chillies (about 65)1 cinnamon stick, optionalHalf a head of garlic, cloves roughly chopped2 medium onions or 1 large, roughly chopped3 tbsp fresh oregano leaves or a few good pinches of dried oregano1-2 tbsp thyme leaves3 tbsp tomato puree1 tsp cumin seeds, crushed2-3 fresh bay leaves4 tbsp olive oil250ml good quality red wine or cider vinegar50ml good quality balsamic vinegar7 tbsp Demerara or palm sugar1 tbsp sea salt plus more to taste MethodWash the chipotles in cold water and drain. Snip off the stalk end of each chilli with scissors, which will allow the water to penetrate their tough skins and discard the seeds to reduce the spiciness. Put the onion, garlic, herbs and spices into the blender with 100ml of water and the chillies. Ingredients for the brownies380g dark 70% cocoa solids chocolate, chopped380g unsalted butter380g caster sugarSeveral large pinches of sea saltTwo small pinches of cinnamon (1/2 tsp)180g plain flour5 medium eggs Ingredients for the Easter topping4 Mars Bars (157g)100ml milk3 tbsp golden syrup90g dark chocolate60ml double cream To sprinkle on top (Use as many as you can find)  3 Flakes, chopped into 2 cm lengths2 packets Rolo’s1 large packet peanut M&M’sEdible glitter, as many colours as possible Method  Pre-heat oven to 190C Grease and line the base of a rectangular brownie tin Melt the butter in a medium pan over a low heat; once melted stir in the chocolate, being careful not to burn it. When the mixture becomes a smooth velvet texture add the sugar, salt and cinnamon. Stir until the sugar has melted and then slowly sift in the flour, stirring to combine. Beat the eggs, then beat into the chocolate mixture bit by bit until fully incorporated. Pour into the prepared tin and bake in the oven for 30-40 minutes until the outside is dark and delicious looking and a skewer comes out just clean. Ingredients Feeds 4 4 Ciabbata buns 25g softened butter 300g refried beans 100g extra mature Cheddar cheese grated Fresh tomato salsa to garnish 50ml crème fraîche 1 egg (Optional) Method Preheat the grill.  Cut the buns in half and toast the open sides under the grill or in a dry frying pan or wide toaster. Mexico is mega-biodiverse so its range of chillies, with all their deep, complex flavours, is the best, not to mention all the wild herbs that add so much sparkle to street food. In the restaurants we use an ancho marinade for our tacos but at home you can try any type of dried chilli to add to the mix. Happy cooking! As with all cocktails, make sure you shake the ingredients over plenty of ice – you don’t want the drink to be diluted. And don’t forget to attach the lid properly. The aim is to shake vigorously until the contents of the shaker are combined and ice-cold, not to wreak havoc in your kitchen. Ingredients Fine sea salt, for rims50ml blanco tequila – choose a 100% agave tequila, we use ‘Gran Centenario Plata’ 30ml fresh lime juice20ml agave (sugar) syrup2 lime wedges, to garnish Method Prepare 2 tumblers with salt rims. Thinly slice the chicken and coat in the chipotle sauce. 2. Put a spoonful of the chicken mixture on the tortilla and layer up with roasted peppers, spring onion, cheese and coriander. 3. Fold the tortilla wrap in half and brush lightly with olive oil. 4. Heat a pan and griddle both sides on a moderate heat on both sides until the cheese is melted and the filling is oozy. Heat a third of the butter in a hot frying pan and add the chorizo until cooked. Set aside to cool. 2. Meanwhile, sift the flour, baking powder and sugar into a large mixing bowl. In another bowl whisk half the corn with the eggs, half the milk and the chile de arbol sauce. Make a well in the centre of the flour, whisk in the egg mix then gradually add the rest of the milk, so that it drops off the spoon in thickish dollops. 3. Melt the rest of the butter and add half of it to the batter before folding in the rest of the corn, the spring onions, chorizo and chopped coriander. Season to taste with salt and pepper. 4. To fry the pancakes, heat a heavy-bottomed, non-stick pan until it is hot and then brush with a little of the remaining melted butter. Dollop out a couple of large dessert spoons of the mixture, spaced well apart so that the fritters don’t run into each other. Fry over a medium heat for about 2 minutes a side until golden brown. Our group, which currently has 23 locations, has reduced the average total energy consumption of newer sites (those established after 2013) by 36%. Further to this, we have regularly assessed the efficiency of older locations, and by upgrading systems and appliances have decreased the average energy consumption of older sites by 15%. For example, adjusting a heater battery at the Bluewater Wahaca led to a 76% reduction in gas use. Ingredients:  1 tbsp pumpkin seeds¼ firm white cabbage, finely slicedSmall head of baby gem lettuce, finely sliced6 large radishes, finely sliced1 small red onion finely sliced1 large carrot, cut into match sticks½ red chilli finely sliced1 tbsp chopped coriander For the dressing: 1 tbsp good quality mayonnaise1 small clove of garlic, gratedJuice of ½ lime1tbsp sour cream2 tsp Wahaca chipotle sauceSalt and pepper Method: 1. In a small bowl, mix the dressing ingredients together and add a pinch of salt and pepper. 2. Toast the pumpkin seeds in a dry frying pan until lightly coloured. 3. In a large bowl, mix all the slaw ingredients together, but save some of the pumpkin seeds for garnish. 4. Preheat the oven to 200C/gas mark 6. 2. In a frying pan, sweat the onions until soft and translucent, set aside and leave to cool. 3. In a bowl, mix the grated cheese, black beans, cooled onions, chile de arbol sauce and thyme and mash so that the black beans roughly bind everything together4. Roll the pastry until about five mm thick. Cut into 8 equal squares. 5. In each square put one to two generous tbs of the black bean mixture in the middle of each square. 6. Brush some egg wash around the filling, then fold a corner of the pastry over to the opposite corner to make a triangle. Press the edges together with a fork. 7. Brush the parcels with the remaining egg wash and prick with the fork once or twice to create air holes. Bake for 20 minutes, or until crisp and golden. Mix the marinade ingredients in a bowl. 2. Coat the beef in the marinade and leave for at least an hour in the fridge (for best results overnight). 3. Heat the vegetable oil in a heavy bottomed pan and gently sweat the onions until translucent. Then add the beef to the pan and brown on all sides. 4. Add the chicken stock and bay leaves and bring to the boil. 5. Transfer into an oven safe casserole dish with a lid and put into a pre-heated oven at 180°C for around 1 hour 30 minutes or until the beef is tender. 6. Shred the beef just before serving and serve with warm tortillas, sour cream and tomato salsa. Tip: After step 4, transfer to a slow cooker and put on a low heat for six hours, the meat will be meltingly tender and you will have a hearty supper waiting for you when you get home form work. --- ### Huitlacoche - The Mexican Corn Truffle > Discover huitlacoche, the mexican corn truffle. Coming from a UK supermarket where everything is flown in from all around the world it is pretty incredible visiting these markets where all the produce is locally grown and the variety is incredible. Huitlacoche is one of those Mexican produce that is impossible to get fresh in the UK so at Wahaca we get it brought in from Mexico canned. (We are hoping to encourage some British farmers to grow the huitlacoche for us! ) It is a very new flavour and ingredient in the UK and it is through Wahaca that many are probably trying it for the first time. Probably half the time not knowing what they are eating but hopefully enjoying the flavours. I therefore thought it would be good to tell you all a little more about this ingredient. Huitlacoche is a fungal, and in Mexico a culinary delicacy, that grows on ears of corn as they ripen after a heavy rain or period of high moisture. While most farmers will treat it like an infectious affliction that ruins corn crops, it has a long history in the cuisine of the Aztecs, Hopi & Zuni. The Zuni Indians call the corn fungus corn-soot and say it symbolizes the “generation of life” whereas farmers have called it smut, soot or devil’s corn. The... ---
